Shrimp Pad Thai Noodle Bowl

Last week we introduced Meal Share Monday. Today we have another recipe and a new name, lol. I did say things could change and evolve along with me. So the new name is Made it Monday!

I found this recipe in the Summer 2020 edition of Oxygen Magazine. I went to the bookstore a few weeks ago in which that’s something I hadn’t done in a long time. Amiyah and I used to go to the bookstore a lot and we could spend hours there. She loves looking at the new books because she’s a book worm. I like looking at all the magazines and looking at the business books trying to figure out my passion.

Every now and then I’ll stumble upon a few good recipes in magazines. I love Pad Thai and I love simple recipes so this one is both.

SHRIMP PAD THAI NOODLE BOWL

INGREDIENTS

Sauce

  • 2 tbsp brown sugar
  • 1/4 cup fish sauce
  • 1/4 cup tamarind concentrate or lemon juice
  • 2 tbsp low-sodium soy sauce

Shrimp + Noodles

  • 8oz protein or chickpea pasta of choice
  • 2 tbsp olive oil, divided
  • 1lb cooked peeled and deveined shrimp(fresh or frozen)
  • 2 red bell peppers, thinly sliced
  • 1 cup bean sprouts
  • 1/2 cup carrots, shredded
  • 4 cloves garlic, minced
  • 3 green onions, sliced into 1-inch pieces

Toppings(optional)

  • 1/4 cup chopped peanuts
  • juice of 1 lime
  • 1/4 tsp crushed red pepper flakes

DIRECTIONS

Add sauce ingredients to a bowl and whisk to combine. Set aside. Cook noodles al dente according to package instructions. Drain and immediately toss with 1 tablespoon olive oil. Set aside. Heat remaining oil on high in a large sauté pan or wok. Add shrimp and sauté 1 to 2 minutes, tossing occasionally, until pink and cooked through. Transfer to a plate. Add peppers, sprouts, and garlic and sauté 2 minutes, stirring occasionally. Add cooked shrimp, noodles, sauce and green onions. Toss well to combine. Serve with toppings (if using).

The only thing I probably would change is to only use 1 red bell pepper Instead of 2. I don’t think when I get Pad Thai it normally has red bell peppers. Other then that is GREAT! If you try this recipe let me know what you think. ENJOY! ~Selena
